Mexican foodies love to say that authentic Mexican recipes like this one for easy quesadillas make it hard to imagine Mexican appetizers getting any more simple and easy to make. Quesadillas are a lot like the American classic: grilled cheese sandwiches– only we’re substituting corn tortillas in place of the bread, in order to bind our sandwich!

Quesadillas are perhaps most commonly thought of as a quick snack to whip up, or even a fast supper if you just make a few extra and you’re in a lazy mood, when you’ve had a long day and you’re not up for making anything super time consuming. Let’s go:

Time it takes to cook these: 15 minutes, more or less

Ingredients you need (serves 4 guests):

-some kind of Mexican salsa, like salsa bandera, or a guacamole–something to give your quesadillas a bit more flavor -roughly 200g of manchego cheese -8 tortillas (corn, not flour)

Directions for making these:

Heat up a cast iron pan on the stove on medium heat (regular pan if you don’t have one).

Slice the machego cheese into eight same size pieces.

Now prepare your favorite salsa (I’ve recommended a few above, in the ingredients list).

Warm up the tortillas one at a time, and as each is starting to heat up, add a bit of manchego cheese to it, then fold the whole thing in half so that it looks like a semi-circle cheese sandwich…thingy, and just allow it to heat up enough so that the manchego melts and you’re left with a delicious quesadilla.

Remove each when ready and then top with the salsa you made, and then enjoy your tasty creation: by far of the most easy Mexican recipes from the entire Mexican appetizers area of the Mexican cusisine.
